These low carb beauty’s kind of resemble the Brain and are loaded with brain healthy Choline and other B vitamins great for Brain Health.
INGREDIENTS:
- 1 Head of organic cauliflower (mix with purple cauliflower when available)
- 2 Medium yellow onions sliced
- 4 Thyme Sprigs
- 2 Rosemary Sprigs
- 6 Unpeeled garlic cloves
- 3 Tbsp extra virgin olive oil
- Sea Salt & freshly ground
- black pepper
METHOD:
- Preheat oven to 425 degrees
- Trim cauliflower and cut into small florets
- Place cauliflower, sliced yellow onion, thyme sprigs, rosemary sprigs and unpeeled garlic gloves in large bowl. Toss with oil; season with salt and ground black pepper
- Line baking sheet with parchment paper; transfer to baking sheet. Roast, tossing occasionally, until fork tender, 30-35 minutes
TIPP: Optional - sprinkle with nutritional yeast or organic kelp flakes to increase your B12 and Iron intake
